Homemade Hiyashi Chuka Sauce (2 Servings)
- 50 ml water
- 4 tbsp soy sauce
- 3 tbsp rice vinegar
- 2 tbsp sugar
- 2 tbsp mirin
- 1 tsp chicken bouillon powder
- 1 tbsp sesame oil
Combine all ingredients in a microwave-safe bowl and heat for about 20–30 seconds until the sugar dissolves completely. Chill well before serving over cold noodles.

While traditional hiyashi chuka is often made from scratch, this recipe shows how to turn Yamachan Ramen's Tokyo Shoyu Ramen into an easy homemade hiyashi chuka using both the fresh noodles and the included shoyu soup base.

Instructions
1) Bring a pot of water to a boil and cook the ramen noodles according to the package instructions.
2) Drain the noodles and rinse thoroughly under cold running water. Drain well.
3) In a bowl, combine the shoyu soup base, water, vinegar, sugar, and sesame oil. Stir until the sugar dissolves.
4) Arrange the chilled noodles on a serving plate.
5) Add your favorite toppings.
6) Pour the chilled sauce over the noodles just before serving.
