- At least 6¼ cups or 1.5L of Water
Sauce
- ½ oz of Shoyu Ramen or Tokyo Shoyu Ramen Soup Base
- 1 tbsp Sesame Oil
- 1 tbsp Vinegar
- 1 tbsp Lard or alternative oil
- 1 tsp Bonito Powder (fish flour)
- ½ tsp Garlic (grated)
- ½ tsp Ginger (grated)
- 60 ml or 2 oz Hot Water
- A pinch of Chili Powder (as you like)
- A pinch of Black Pepper (as you like)
- A pinch of Sesame Seeds (as you like)
Recommended Toppings
- Chashu (diced)
- Niku Miso
- Steamed Chicken Breast (seasoned as you like)
- Menma
- Bean Sprouts (lightly boiled)

Enjoy with toppings like minced pork, chicken, beef, egg, menma, and nori, and customize it spicy or mild to suit your taste. This versatile dish is perfect for quick weeknight dinners or creative ramen twists.
How to Enjoy Mazemen at Home

Mazemen can be customized with different proteins such as minced pork,
chicken, or beef. Chicken mazemen offers a lighter flavor, while beef mazemen adds extra richness to the dish. -
Customize Your Sauce:

- 1 tsp Bonito Powder (fish flour)

- ½ tsp Ginger (grated)

INSTRUCTIONS
Before You Start
(Optional Protein Variations):
Choose your preferred protein before mixing your mazemen sauce:
- Minced pork (classic)
- Steamed chicken breast or minced chicken (lighter option)
- Minced beef (richer, deeper flavor)
Cook your chosen protein in advance so it’s ready to add as a topping in Step 4.
Optional Upgrade: Warm the Sauce (Recommended, but Optional)
If you have time, gently warming the sauce can help the flavors blend more smoothly and bring out the aroma of garlic, ginger, and sesame oil.
- Microwave: Mix all sauce ingredients in a microwave-safe bowl, cover loosely, and microwave for 20–30 seconds. Stir well.
- Stovetop: Mix all sauce ingredients in a small saucepan and warm over low heat for a few minutes, stirring gently, just until warmed and aromatic. Do not boil. Remove from heat and stir well.
1) Mix all the sauce ingredients very well. (Optional: warm the sauce using one of the methods above.)
2) Cook the noodles. Drain well.
3) Mix the noodles and the mazemen sauce in a bowl well.
4) Add your favorite toppings to the top. Enjoy!
