Mazemen Recipe

What is Mazemen?

Mazemen, or soupless ramen, is easy to make at home with a simple shoyu-based sauce.

How to Enjoy Mazemen at Home

  • Add Protein Variations:
Mazemen can be customized with your preferred protein.

For a classic flavor, use minced pork.

For a lighter option, choose steamed chicken breast or minced chicken.

Minced beef also adds richness and depth—especially great for shoyu-based or spicy mazemen styles.

  • Customize Your Sauce:
Experiment with spicy, savory, or tangy sauces by adjusting soy sauce, sesame oil, chili oil, or vinegar to your preference.

  • Get Creative with Toppings:
Add soft-boiled eggs, minced pork, diced chicken, nori flakes, green onions, bamboo shoots (menma), or even grated cheese for a fusion twist.

  • Serve Hot or Cold:
Mazemen can be enjoyed either freshly hot or chilled, making it versatile for all seasons.

  • Finish with Rice:
After enjoying noodles, add a small portion of steamed rice into the remaining sauce for a delicious final bite—this is a popular way to fully enjoy Mazemen in Japan.
