Vegan Niku Miso Recipe for Ramen

What is Vegan Niku Miso?

Looking for a plant-based version of traditional niku miso? Vegan niku miso recreates the rich umami flavor and crumbly texture of classic Japanese meat miso using plant-based ingredients.

By using plant-based ground meat or extra firm tofu, you can achieve a similar texture and flavor while keeping the original concept intact.

This versatile topping works well for ramen, rice bowls, and noodle dishes, making it easy to add plant-based options without changing your base recipes.

Why Add Vegan Niku Miso to Your Ramen?

Vegan niku miso adds rich umami flavor and texture to ramen while keeping the topping plant-based.

It allows you to offer a plant-based option without losing the depth and balance that niku miso brings to a bowl.

How to Use Vegan Niku Miso

Transform your ramen into a hearty and flavorful meal by simply topping it with Vegan Niku Miso. It pairs especially well with plant-based miso ramen, tantanmen, or spicy ramen.

Recipe Ideas

These examples use non-vegan ramen bases, but Vegan Niku Miso can be used as a plant-based topping option.

Ingredients

  • Plant-based ground meat (200g), or extra firm tofu (250g)
  • a clove of chopped garlic
  • 2 tbsp roasted sesame seeds
  • 1 tbsp sesame oil
  • 3 1/2 tbsp miso
  • 2 tbsp sugar
  • A pinch of salt and pepper (more pepper tastes better)

Instructions

1) Heat a frying pan over medium heat and add oil.

2) Add the chopped garlic and sauté until fragrant.

3) Add your chosen base ingredient:
Use plant-based ground meat directly, or
Crumble extra firm tofu by squeezing it through your fingers into the pan, creating small, ground-meat-like pieces.

4) For best results, use extra firm tofu. Soft or regular firm tofu contains excess moisture and will not create the desired texture.

5) Cook until the mixture is lightly browned and most of the moisture has evaporated.
(The mixture should become slightly dry and crumbly, similar to cooked ground meat.)

6) Add sugar and miso and mix well.

7) Add salt, pepper, and sesame seeds to taste. Enjoy!
